I made this for dinner tonight and my husband loved it, he said that was better than anything we’d had at our favorite NYC Mexican restaurant, Rosa Mexicana. We’re having company soon and he suggested we serve this. It was easy to make, and like that it can be prepared in advance. Thank you.

I made these for company and they were phenomenal! Next time I will use the chicken and sauce as the stuffing for stuffed peppers instead of using tortillas to make it healthier for my diabetic husband. It is so flavorful I am sure they will be delicious too.

The sauce is so good as well as the enchiladas so easy and delicious my husband can’t have tomato so this is a good substitute for him he loved it

I could eat this sauce with a spoon! SO GOOD. This has become our go-to meal for when a neighbor needs a meal because it’s delicious, everybody loves it, and it’s really easy to make!
