I’ve found levain cookies in the freezer section of the grocery store once, but don’t recall the baking process and haven’t seen them again. Would you suggest thawing before baking? We love these in my house!! We do replace half the chocolate chips with chopped Andes candies (chocolate mints)! Adds something special to them!

I am assuming it is unsalted butter since you’ve got salt in the recipe ingredients, and most recipes use unsalted butter when baking, but I wanted to be sure.

I love this recipe as is, but have modified it slightly for the preferences of the eventual consumers. I have made the cookies a little smaller so that my yield is 16 cookies. Another occasional change is to add 3/4 cup of white chocolate chips and 3/4cup of bittersweet chips along with 1 1/2 cups of quartered macadamia nuts. The larger chunks sem to work better than chopped nuts. It takes a little extra time but I think it is worth it. Also, don’t forget that judicious amount of flaked sea-salt.
