Sooo good. I subbed ground chicken for the beef, and a jar of marinara for the crushed tomatoes (that’s what I had on hand). The servings we didn’t eat froze well too. Will make this a regular rotation.

This soup was delicious! We had it on New Year’s Eve and it was a hit – we’ll definitely make again and again! Thank you Melissa Stadler… you create amazing recipes and I talk you and your website up to all my friends!

A few tips: I used whole peeled tomatoes, and blended them in the blender first before putting them into the pot with the other ingredients. Makes for a really smooth soup. Next time I will omit the Mozzarella cheese from the pot of soup, and instead garnish in the individual bowls of soup. It was a bit of a disaster to clean the pot, ladle, and scrubbing brush used to clean the pot. I also like to cook the meat separately and drain the fat off before adding to the onions and garlic. Last tip, keep the cooked noodles separate from the soup. Add them into your already warmed soup when ready to eat. Definitely like my noodles al dente. If added to the soup pot and there are leftovers, they tend to get too soggy for my taste. Hope this helps.
