In reply to Valerie. I had the same question. Recipes usually specify if they include unsalted butter. You had to read through the post to find where she says unsalted. I’m still confused as to whether I should use cold, cubed butter or softened butter; both are listed between the instructions early on in the post and the ingredients later in the post.

Hello! If possible could I have some clarifications on the below?
– What happens if I use 1 egg plus 1 egg yolk instead of 2 eggs?
– Can I use room temperarure butter (and eggs) instead of cold, in order to better incorporate with the rest, and then make the dough rest more to avoid the overspreading (once after finishing the dough and before rolling into balls, and then one more time after creating the balls and before placing into the oven – in this case should they go into the oven straight from the fridge or after coming back to room temp?)
– In the case of the additional resting time above, since usually baking soda is not good for long resting times and should be cooked almost immediately, can I use a mix of baking powder and baking soda (something like 3/4 t each maybe?)
